How are you displaying the poll? Via menu item or using content plugin? There is a similar issue fixed with content plugin and will be released shortly. -

I tested this in my local site and able to save more than two answers without issues. Please try clearing your browser cache, and start afresh from questions list page. -

Go to Components -> Community Surveys -> Email templates and update invite template there. It will be used as default template for all your invites later.
